Hong Kong style milk tea has its roots in the colonial era. Instead of having their tea with milk like the British, the Cantonese adapted it and added condensed or evaporated milk instead. Coupled with the many rounds of silk straining, what you get is a smooth and rich Hong Kong-style milk tea.
